In an effort to eat a more balanced and healthier diet, I’ve been on the lookout for main dish salads with a creative twist. This is one I never thought to make and I’m sure glad I gave it a try.
This salad is adapted from one we saw on Mad Hungry with Lucinda Scala Quinn.
Feeds 4 (including 2 growing teenage boys)
Sausage and Pepper Salad
1 pound sweet Italian sausage, casings removed
2 red peppers, sliced into 1/4in rings
3 green onions, white and green portions sliced in 1/4in rounds
2 heads of Romaine hearts, chopped
olive oil
assorted salad toppings
dressing of choice
Directions: Brown sausage until cooked, drain on paper towel lined plate. In the same pan add a little olive oil then add peppers and onions. Cook just until softened. While the sausage is cooking, chop lettuce. Prepare other toppings, we used pepperoncini rings, black and green olives and artichoke heart quarters. Assemble salads and top with your favorite dressing.
My mother-in-law sent me a bottle of this wonderful Pesto finishing sauce/dressing from Duffinetti’s and we used that for our salads. The flavors were divine and went together so well. I am going to be sad when we finish this sauce because it’s so good and not all that easy to get. I could buy it online but shipping is costly. Good stuff. I also never thought to put Italian sausage in a salad but it was so yummy.

I love the recipe but I migh be tempted to add in abit of honey to the sausage as I can’t resist a glazed sausage. The recipe is great and I will jot it down for better weather so we can enjoy it outdoors.
